Share
This is a fragrant saffron rice Persian recipe

Ingredients (4 servings)
- 1½ cups basmati rice
- 2¼ cups water or chicken/vegetable broth
- 2 tbsp unsalted butter or 1½ tbsp olive oil
- ¼ tsp saffron threads
- 2 tbsp hot water
- ½ tsp salt (or to taste)
Instructions
- Rinse the rice under cold water until the water runs mostly clear. Soak with salt for 20–30 minutes if using basmati, then drain.
- Bloom the saffron: Crush the saffron threads lightly and soak them in 2 tablespoons of hot (not boiling) water for 10 minutes.
- Cook: Add the water or broth, and any optional whole spices to a pan. Bring to a boil, then reduce to low, add the rice, cover, and cook for 5–10 minutes, until the rice core cook.

- Rest: Remove from the heat and drain the rice. Drizzle the saffron water evenly over the rice and gently fluff with a fork to create streaks of golden color. Then put it back to the pan, cook it with cover for 20 minutes.
- Finish: Your saffron rice is ready to serve with any kind of meat or stew.

Optional garnishes
- Toasted sliced almonds or pistachios
- Golden raisins or dried cranberries
- Chopped fresh parsley or cilantro
- A squeeze of lemon juice
Tip: Use high-quality saffron and avoid adding it directly to the pot without blooming—it releases much more color and aroma when steeped first.
