How To Prepare Saffron Rice

This is a fragrant saffron rice Persian recipe

Ingredients (4 servings)

  • 1½ cups basmati rice
  • 2¼ cups water or chicken/vegetable broth
  • 2 tbsp unsalted butter or 1½ tbsp olive oil
  • ¼ tsp saffron threads
  • 2 tbsp hot water
  • ½ tsp salt (or to taste)

Instructions

  1. Rinse the rice under cold water until the water runs mostly clear. Soak with salt for 20–30 minutes if using basmati, then drain.
  2. Bloom the saffron: Crush the saffron threads lightly and soak them in 2 tablespoons of hot (not boiling) water for 10 minutes.
  3. Cook: Add the water or broth, and any optional whole spices to a pan. Bring to a boil, then reduce to low, add the rice, cover, and cook for 5–10 minutes, until the rice core cook.

  1. Rest: Remove from the heat and drain the rice. Drizzle the saffron water evenly over the rice and gently fluff with a fork to create streaks of golden color. Then put it back to the pan, cook it with cover for 20 minutes.
  2. Finish: Your saffron rice is ready to serve with any kind of meat or stew.

Optional garnishes

  • Toasted sliced almonds or pistachios
  • Golden raisins or dried cranberries
  • Chopped fresh parsley or cilantro
  • A squeeze of lemon juice

Tip: Use high-quality saffron and avoid adding it directly to the pot without blooming—it releases much more color and aroma when steeped first.
